In my home, a working oven seems to be MIA, so in place, a
conventional microwave oven seems to do the job. Producing things like cupcakes
and even Sunday roasts.
As my first recipe, I was inspired to make a basic sponge
cake with the addition of a popular ingredient, Nutella. Using an ingredient
loved by many, my version of the Nutella Cake was born. It’s been my most successful
bake to date, (believe me I’ve failed many times with different recipes). It’s
an easy cake to make and if I do say so myself, pretty delicious.
Ingredients
Serves 6(ish)
For the Cake:
- 100g butter (softened, room temperature)
- 200g caster sugar
- 100g Nutella
- 4 medium eggs
- 200g self-raising flour
- ½ tsp baking powder
- Pinch of salt
To decorate/fill:
- 50g Nutella (change according to your preferences)
- Icing sugar to dust
Steps
- Firstly, I like to pre-heat the conventional oven at 200°/180° for a normal oven) like all good chefs. Then, grease and line my 20 cm (8 inches) sandwich tins.
- I beat together my butter and sugar until they’re smooth
- Once my butter and sugar have been mixed together I add in my nutella and mix well
- Then I whisk together my eggs and add them into my butter, sugar and nutella mixture
- In a separate bowl I sift together my flour and baking powder with the pinch of salt, before folding them into my wet mix. ( If using an electric mixer, add in flour slowly to stop it from making a mess)
- Next thing to do, is separate the mix out into the sandwich tins and bake them for around 20 – 25 mins (depending on the power of your oven you may need to alter the timing).
- I use a wooden skewer to check if my cake is properly baked and then get it out of the tin and place it on a cooling rack.
- Then comes my favourite bit, assembling the cake.
- Taking the first layer, I place it on a cake stand (depending on how perfect you want it to look, you can trim the top to flatten it. I prefer it to look a little more rustic therefore leave it how it is).
- I spread over the remaining nutella (you can add as much or as little as you’d like, I say the more the better, you can never have too much Nutella, Unless you’re my mum of course).
- Finally, I turn my second layer upside down so the flat side is on top and place it on top of the nutella. To finish off, I dust the top of my cake with some icing sugar... voila! You have your NUTELLA CAKE.
